Amaretto
Bread Pudding
1 loaf dry bread (I use French bread from Walmart)
1 pint half & half
1 pint milk
1 cup sugar
3 eggs
1 Tablespoon almond extract
¼ cup sliced almonds
1 cup raisins (optional)
Combine eggs, sugar, half & half, milk and almond extract. Slice bread cut into 1 inch pieces. Soak bread in egg mixture one hour or overnight. Preheat oven to 325 degrees. Grease 9x12 baking dish with butter. Add almonds to egg mixture and bake for 45 to 50 minutes.

- 2 cups old-fashioned rolled oats (not instant)
- 3/4 cup light brown sugar
- 1 cup walnuts or pecans, divided
- 1/2 cup raisins
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 2 large eggs
- 2 cups milk
- 1 teaspoon vanilla extract
- 4 tablespoons unsalted butter, melted, plus more for greasing the dish
- 2 tart yet sweet baking apples, such as Honey Crisp, peeled and cut into 1/2-inch chunks (about 2 cups)
Instructions
- Preheat the oven to 325°F. Grease an 8 or 9-inch baking dish with butter.
- In a medium bowl, combine the oats, brown sugar, 1/2 cup of the nuts, raisins, baking powder, cinnamon and salt. Mix well.
- In another bowl, break up the eggs with a whisk; then whisk in the milk and vanilla until well combined.
- Add the milk mixture to the oat mixture, along with the melted butter.
- Scatter the apples evenly on the bottom of the prepared baking dish. Pour the oatmeal mixture over top and spread evenly. Sprinkle remaining 1/2 cup nuts on top. Bake for 40-45 minutes, until the top is golden and the oats are set. Serve warm or at room temperature.
- Preheat the oven to 325°F. Grease an 8 or 9-inch baking dish with butter.
Connie's Pecan Pie
9 inch pie crust

1 cup dark corn syrup, molasses or Steen's syrup
3/4 cup sugar
1/4 cup melted butter
1 tsp. vanilla
1/4 tsp. salt
1 cup broken pecans
Mix all ingredients together and pour into raw pie shell and bake at 400 degrees for 10 minutes, then at 350 degrees for 25 to 30 minutes until center is almost set.

¾ cup (3 ounces) shredded cheddar cheese
½ cup finely chopped broccoli
½ cup finely chopped cauliflower
½ cup finely chopped mushrooms
½ cup finely chopped green pepper
½ cup finely chopped tomato
Unroll crescent rolls and place in bottom of a 15 X10 X 1 in jelly roll pan, lightly sprayed with Pam. Pinch perforations together to seal.
Bush dough with beaten egg.
Bake at 375 F for 11 about 11 minutes, until brown.

Pour batter into three greased and floured 9-inch round cakepans. Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans, and cool completely on wire racks.
Spread Cream Cheese Frosting between layers and on top and sides of cake; sprinkle 1/2 cup chopped pecans on top. Store in refrigerator.

½ yellow onion, diced
½ green pepper, diced
2 small cloves garlic, minced
1 lb breakfast sausage
Preheat oven to 350 degrees & lightly grease a 13” by 9” glass pan. In large bowl, whisk together eggs, almond milk, salt & pepper. Set aside. In large skillet, heat olive oil over medium-high heat. Add onions and sauté about 5-7 minutes. Add diced peppers & saute another 3-5 minutes. Add garlic & sauté 1 minute. Add sausage and continue cooking until sausage is browned. Combine all ingredients and bake for 45 min. to 1 hour.

(After making balls I flatten on baking sheet with the bottom of a glass dipped in sugar. This makes them very flat. I bake them at least 14 minutes because I like them brown and very crisp)

2 cans Crescent rolls Topping
2 (8oz.) cream cheese 1/2 cup sugar
1 tsp. vanilla 1 tsp. cinnamon
1 cup sugar 1/2 cup chopped nuts
2 eggs
Place one can crescent rolls on bottom of 9x13 baking dish. Mix cheese, eggs, vanilla and 1 cup sugar. Pour over crescent rolls. Cover cheese mixture with second pkg of crescent rolls. Mix nuts, sugar and cinnamon. Top crust with mixture. Bake at 350 for 30 min.

1 cup sugar 1/2 cup chopped nuts
2 eggs
Place one can crescent rolls on bottom of 9x13 baking dish. Mix cheese, eggs, vanilla and 1 cup sugar. Pour over crescent rolls. Cover cheese mixture with second pkg of crescent rolls. Mix nuts, sugar and cinnamon. Top crust with mixture. Bake at 350 for 30 min.
Apple Cobbler with Cookie Dough
Topping
8 tart apples (3 ½ pounds), peeled, cored, thinly sliced (Granny Smith)
Grated zest of one lemon and lime each
½ cup sugar
½ teaspoon ground cinnamon
1 cup (2 sticks butter), melted
1 cup sugar
1 large egg
½ teaspoon vanilla
1½ cups flour
1 teaspoon baking powder
¼ teaspoon salt
Preheat oven to 350 degrees. Toss apples, lemon and lime zests, ½ cup sugar, and cinnamon in large bowl until combined. Spread apple mixture evenly in 13 x 9 inch baking dis. Whisk butter and sugar in large bowl until well combined, then blend in egg and vanilla. In medium bowl, blend flour, baking powder and salt; stir into butter mixture. Using a spoon, drop large dollops of batter over apples, leaving spaces in between. Bake for 40 minutes or until topping is golden. Serve warm or at room temperature.
